Even my daughter doesn’t like Mondays!

Normally most of us are like Monday *sigh* *groan* and want to crawl back into bed, but not me today. Not only did I start my day with a delicious Chocolate Cherry Smoothie! But today’s the day (hopefully) my new pole comes in so I’m like watching out the window for any sign of the UPS guys like a dog watching for the mail man.

So I hope you all had a wonderful weekend, I know I did. I nerd-ed it up Saturday night with some D&D!

I play the Dungeon Master and right now the party is going through a dungeon I made myself and seem to be enjoying it, they haven’t even gotten into the first room but in order to get into the dungeon they had to solve a riddle (Pictured to the left).

I really like to go all out for anything that remotely takes creativity. Turns out, riddles are a lot harder to come up with than I thought. It’s all about how you word things and you have to make sure you don’t contradict yourself half way through.

They did eventually solve it, but it was such fun to watch the little cogs in their minds at work as they discussed/argued with each other over what certain clues meant. Of course my love decided that they should just pull the lever to see what happens, regardless of the riddle and clues, and they did in fact get attacked by a skeleton.

IMG_20131116_195109This is the party that I play with, there’s my little sister, my cousin Matt beside her, my cousin Greg in the orange and red, my brother Dan beside him, of course me at the end of the table, and my love was gracious enough to take the picture for us. Next time I’m going to get a picture of all of us.

So enough of the epic nerdiness that went down that night. This Sunday was also my loves birthday! I had planned a surprise party for him, kind of, it wasn’t like I brought him somewhere and people were all hiding, it was his day off so I couldn’t do that sneakily enough. Instead I had them come to our house and had him answer the door. He was surprised to see people so I succeeded!

Now I love baking, but this boy is so damn picky that he shot down every idea I had for a cake last year that I said screw it this year and picked him out a store bought cake (blech) that he had been pointing out all this month every time we went grocery shopping, sort of a major hint hint Elise, hint hint.

We had a delicious sweet and sour chicken on rice for dinner, a meal I love but takes a lot of time to make. But it fed 11 people so it was a success. And all the birthday money he got will be going towards the PS4 we’re buying each other for Christmas.

As for the gift I got him, well I was a good girlfriend and bought him GTA 5 (which I’m not going to lie, I plan to play once he’s done)

WHICH REMINDS ME! I made him go to the strip club in GTA so I could get all judgmental on the pole dancers and when we got there… I was thoroughly impressed. Like really REALLY impressed!

The developers obviously did their research, which I’m sure none of them complained about, but they obviously didn’t do their research at any plain ol’strip club, because these girls were doing shoulder mounts, inverted V’s, corkscrews, martini, and even caterpillar. There wasn’t any gyrating and grinding the pole, okay maybe a little, but it was mostly all very impressive, and lets not forget the body waves and grinding can be important in a routine, you want a certain degree of sexy.

Alright so I’m not going to lie, I missed the blog over the weekend, but I had to stick to my guns because some weekends I wont be able to post and I want to be consistent. But because I missed it so much, today I’m going to leave you with another healthy but delicious recipe! This one is definitely one of my favorites for lunch.

Cashew Chicken Lettuce Wraps

I LOOOVVEEE anything in a lettuce wrap, it just adds that great crunchiness that bread just can’t mimic, even when toasted. And this recipe has an Asian twist, which is my favorite type of twist! So please enjoy this semi-simple healthy recipe because I know I sure do!

Ingredients

For stir fry sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • ¼ teaspoon ground red pepper
  • ¼ teaspoon ground ginger
  • 1 teaspoon sesame oil

For Cashew Chicken:

  • 2 chicken breasts (about ¾ lb. total), diced
  • 8 leaves of greenleaf or iceburg lettuce
  • 3 tablespoons canola oil (or oil of choice)
  • 1 cup onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon soy sauce
  • ¼ cup cashews, chopped
  • Salt and pepper to taste

Instructions

For stir fry sauce:
  1. Mix all stir fry sauce ingredients making sure to dissolve brown sugar. Set aside.
For Cashew Chicken:
  1. Heat canola oil in pan over medium to medium high heat. Add diced chicken and brown (about 4-5 minutes). Remove chicken from oil. Add onions, garlic and 1 teaspoon soy sauce to pan; brown. When onions and garlic are brown and tender, add stir fry sauce, browned chicken, and cashews. Saute mixture for a few minutes and remove from heat.
  2. Spoon chicken mixture into individual lettuce leaves. Add your favorite hot sauce, more cashews or basil.

mmmmMMMMM! So good! I could eat sooooo much of this, just remember moderation is the key in eating. Until tomorrow my loves!
